Cooking with a barbecue grill is a rapid process. In case of tough pieces of meat like steaks, this does not allow the meat to be cooked properly, as in, to get tenderized. Cooking with a barbecue smoker is a slow process, which allows the entire piece of meat to get slowly cooked and therefore, tenderized. For tough pieces of meat, this is extremely important. This is why many commercial restaurants prefer the barbecue smoker instead of the grill.

There are different models of barbecue smokers available in the market.
