Wood Cooked Barbecue-Flavor to be cherished



Barbecue in some places are called as BBQ and as Barbie in Australia, New Zealand etc.It mainly involves cooking of meat by the application of heat and smoke.Barbecue can be prepared by the smoke and heat produced by the wood as fuel.

Nowadays people prefer healthy food with fewer calories.
While cooking with wood, there is no use of any chemicals, preservatives or additives. The calories or fat in the meat or other food stuff will be eliminated by the smoking. It can be used in addition to the charcoal and gas. Or the wood can be used exclusively.

The wood may be in the form of chips, pellets, chunks or dust. The structure of the barbecue can be of square shaped, barrel or kettle shaped. Compared to the other two the square shaped model will be more helpful. In this there will be front doors and side chambers.

This helps to retain the smoke and heat in the chamber. In the barrel or kettle type the heat is lost every time the barbecue smoker is opened. As a result it requires lots of wood to regain the temperature lost. There is also the hazard of you ending up burning your arm.

The Barbecue Wood Smokers are available in different sizes of 24”, 36”, and 48”; also in sizes used for commercial purpose and trailer models. There are also wood chip smoking boxes available for the purpose of cooking barbecues. The dimension of which is just 8.75 inches. This is a separate fire box through which hot smoke is drawn through the food stuff by convection. This does very slow cooking. The cooking can be done by using the wood chips which impart distinctive flavors to the food. The cleaning of such smoking boxes will also be easy.

There is a wide range of woods available in the form of chips or fire wood for the barbeque cooking. And different woods impart different flavors to the food stuff. The types of barbecue wood smoker chips include pecan, mesquite, apple, cherry, maple, hickory, oak, and pear. But the wood from conifers will not be used because it contains a tar like substance which imparts undesirable resinous and chemical flavors.

If this wood has to be used a rocket stove or a catalytic grill should be used which will burn off all the tar content. All the woods will not burn alike producing the same heat. The variation in heat will also be affected by the quantity of wood and adjusting the venting to control the rate of burn.

The charcoal grill can be used for cooking barbecue. When charcoal grill is used first the wood chunks are to be stacked in centre of it. Then the wood has to be ignited with paper or starter fluid. Then sufficient chunks of wood are added to build the strong bed of coals. Nearly twelve to fifteen pieces will have to be added. After the flame burns down nearly to one inch over the grid, the food has to be applied.
